Vegetable Miso Soup

Dashi-iri miso paste is available at Asian grocery shops.  Nippon Food in Subiaco sells non MSG, GMO free miso paste.  For babies, just use tiny amount of miso paste as it’s quite salty.  For grown-ups, adjust to use more miso paste to your taste.

You will need…  (serves about 2~3 bowls)

  • 1 Potato
  • 1/4 Carrot
  • 1 Brown Onion (small)
  • chopped Spring Onions (optional)
  • Dashi-iri Miso Paste (try to chose non MSG, GMO free miso paste)

How to cook…

  • Peel and cut potato, carrot and onion.
  • Place potato, carrot and 2 cups of water in a pan, and bring to gentle boil.  Add onion, and simmer until vegetables are tender.
  • Turn off the heat.  Take 1 ladle of soup into an empty bowl or cup, and mix with miso paste.  Use little amount of miso paste for babies.  Adjust the amount of miso paste for adults.  Pour it back to the pan, and stir well.
  • Sprinkle spring onion. (optional)

Cool before serving.
