Potato Potage
Posted September 29th, 2012 No Comments »Thick, smooth soup with goodness of veggies! Great dish for new-to-solid babies to grown-ups. (may need seasonings for adults) Make in a large pot, portion them, and freeze them!
You will need…
- 1 Potato
- 1 Shallot
- 1 cup of Cauliflower florets
- 1 tbs Cheese (I used Coon cheese block)
How to cook…
- Peel potato, and cut into smaller pieces so they’ll cook faster. Chop shallot roughly.
- Place potato, shallot, and cauliflower in a sauce pan, and add about 1 cup of water. Bring to gentle simmer, and cook until the vegetables are tender.
- Add cheese, and stir. Using a hand blender, blend everything into smooth soup.
- If it’s too thick, add more water to adjust.
Cool before serving.
