Potato Potage

Thick, smooth soup with goodness of veggies!  Great dish for new-to-solid babies to grown-ups.  (may need seasonings for adults)  Make in a large pot, portion them, and freeze them!

You will need…

  • 1 Potato
  • 1 Shallot
  • 1 cup of Cauliflower florets
  • 1 tbs Cheese (I used Coon cheese block)

How to cook…

  • Peel potato, and cut into smaller pieces so they’ll cook faster.  Chop shallot roughly.
  • Place potato, shallot, and cauliflower in a sauce pan, and add about 1 cup of water.  Bring to gentle simmer, and cook until the vegetables are tender.
  • Add cheese, and stir.  Using a hand blender, blend everything into smooth soup.
  • If it’s too thick, add more water to adjust.

Cool before serving.
